How to choose foil trays with lids

Start with the job. Foil containers with lids suit anything you plan to freeze, stack in the fridge or drop off to family, because the lid keeps food covered and makes stacking easy. Clear lids let guests see what is inside on a buffet table, but take plastic lids off before a tray goes into the oven. Open foil baking trays are best for roasting and the barbecue, where you want heat and browning. Pick a deep tray for lasagne and saucy bakes, and a shallow one for vegetables or meat you want crisp. Small foil trays are handy for single serves and freezer meals. Full trays can flex, so slide a flat baking sheet underneath before lifting a hot one out.
