How to use cookie cutters and silicone cookie moulds

Chill your dough before cutting so the edges stay sharp, and dip the cutter in flour between cuts to stop it sticking. Roll the dough to an even thickness so every biscuit bakes at the same rate. Silicone moulds and mould trays are flexible, so sit them on a flat baking tray before filling to keep them steady going in and out of the oven or fridge. Let chocolate set fully before you pop it out. Number cutters like the Mondo 9 Piece Number Cutters Set at $23.99 are great for birthday biscuits that spell out an age.
